Xilonen officially opens its doors in Greenpoint, Brooklyn

Plant-based Mexican fare is the focus at Xilonen. Brought to you by the culinary team behind the Michelin-starred Oxomoco, Xilonen - named for the Aztec Goddess of Young Corn – is focusing on vegan and vegetarian recipes that celebrate Mexico. The menu is 75% vegan and 25% vegetarian, serving only some dairy and eggs.

Chef Justin Bazdarich is keeping the focus on sustainability at Xilonen while trying to show the public that vegan and vegetarian dishes can be accessible and delicious. His Chef Collaborative Initiative in 2021 is aimed at creating common guidelines for chefs when developing plant-based menus. Xilonen is also working in partnership with Oceanic Global to decrease plastic use within the restaurant.
