Greg Baxtrom Opens Evi's Bäckerei in Brooklyn

Evi's Bäckerei, an all-day bakery and cafe from chef-owner Greg Baxtrom (of Olmsted and Maison Yaki) and pastry chef Alex Grunert, is now open in Prospect Heights for breakfast and lunch. The shop is offering breads baked daily, pastries, cakes, soups and sandwiches. Holiday treats like Grunert’s Austrian Christmas Stollen and Eggnog Bundt Cake are also being sold for a limited time. Evi’s is named after Grunert’s mother, Evelyn. In the New Year, Baxtrom also plans open Patti Ann’s, a family-friendly restaurant, in honor of his mom, right next door to Evi’s.

At Evi’s, breads sold warm from the oven include Ruby Red Sauerkraut Loaves, Rye Caraway Sourdough, Milk Bread, Baguettes, and Everything Pretzel Roll. Cakes, available whole or by the slice, include Alex’s play on Sachertorte, a multilayered Austrian chocolate cake, and Bee Sting Cake, also known as Oma's Bienenstich, with layers of brioche, vanilla cream and caramelized almonds. Rotating baked goods include Krapfen Austrian Donuts filled with Milk Jam and seasonal jellies, Cinnamon Rolls, Glazed Heirloom Corn & Cherry Scones, Chocolate Creme Fraiche Brownies, and Caramel Chocolate Hazelnut Brest.

On the savory side are Broccoli & Raclette Croissants, Nueske’s Bacon & Jasper Hill Cheddar Schnecke, and Vegan Ham & Cheese Scones. Heartier dishes include Duck Confit & Heirloom Cauliflower Quiche, and Soft Scrambled Egg with Neuske’s bacon, cheddar served on an everything kaiser roll.

The charming space, designed and built by Baxtrom and his father Mike, was created with grab-and-go in mind, including a floor-to-ceiling bread display and baguette baskets refilled throughout the day. Other grab-and-go items include overnight oats with toasted almonds and poached quince, jars of Olmsted’s yuzu kosho butter and Maison Yaki’s duck rillettes, and Brodo broths.

Evi’s is located at 635 Bergen Street, Brooklyn, NY and is open Wednesday - Sunday from 7am - 4pm, with extended hours in the coming weeks.
