For Francophones, the mere name of Chef Galen Zamarra's second restaurant evokes the rustic countryside of French Provence: a mas is a country-style farmhouse in the Provençal tradition, and a grillade is the French answer to a barbecue, inciting images of entire small townships coming together to feast and fête as dinner cooks over hot coals and local kindling. Zamarra's new restaurant builds upon this theme, offering a seasonal menu of dishes, prepared over an open fire burning with locally sourced woods – apple, quince, grapevines, oak, old wine barrels – each of which impart a unique flavor to the variety of menu items: whole black bass in a salt and herb rub, split lobsters, grilled langoustines, baby squid and more. In an era following the molecular gastronomy revolution, the emphasis at Mas (la grillade) is on simple preparation.
