If you’ve never had a Pisco Sour, you don’t know what you’re missing. Kausa, a new Peruvian restaurant in Hell’s Kitchen, makes an excellent rendition. It’s starts with Pisco made from distilled grapes, a splash of lime, simple syrup and egg white shaken until it creates a thick foamy layer on top. It’s finished with a dash of bitters. While you are there treat yourself to Peruvian specialties like rotisserie chicken, ceviche, anticuchos, Lomo Saltada and more.

Kausa is located at 745 9th Ave, New York, NY (646) 678-5227
